For the microbioligical protection of the mash it's pH value should be set to 2.8-3.2. Litmus paper is often painted by the mash (especially by fruit mashes), therefore it is not always suitable for measurement.
Additionally, for adequate measurements the temperature should be 20 C degree, which is difficult to ensure in home environment.
The digital pH meter measures the temperature and does the necessary calibrations to indicate the exact pH value.
