Pectin is the bonding material of fruit cells.

Breaking down these cells will make more sugar and aroma available for the yeasts, making the fermantation faster and more effective. Using pectolase enzymes will ensure higher alcohol yield, more flavours, and helps preventing faulty processes in the fermentation.

The 10 ml dose is enough for the fermentation of 600-1200 kg of fruit mash.
